Mind you, this is a popular snack in Southeast Asia. I have improvised the recipe to make it healthy (at least loaded with more beta-carotene), less sugar (substituted with brown sugar) , more calcium (used low fat milk) and some vanilla extract. It has become one of my kids’ favorite afternoon snacks!

For shrimp lovers, here’s a great, simple and succulent recipe. In this day and age, convenience rules. A good chef should not be ashamed of using the ready-made sauce. I used the Lee Kum Kee tomatoes and garlic sauce. However, I stir-fried some freshly chopped garlic before I added the shrimp and the packet sauce. Then, I threw in some green onions and cilantros for garnishing. It’s quick, easy and delicious!

Now that we are home (from our long trip to Europe and Africa), we are craving for some tropica desserts. Found this recipe and decided to give it a try. It turned out pretty good and make a great afternoon tea snack.

As we were still recovering from jet lag from our trip to Europe and Africa, we really don’t want to make a great effort to prepare a meal. I found some boneless, skinless chicken breast and whipped up this great invention. The chicken strips were seasoned with cumin, curry powder, garlic salt, pepper and rice wine. Pan fried them and, bingo, a meal is ready. My family loves it and sure is glad to be home again.

The first time I tried making this dish, I was still in college. My kids have never tried it until recently. It must have been more than 10 years since I last made it. No particular reason for not making this dish. Since the last time I cooked this for my kids two weeks ago, they have been begging for more. Now, I have broken my own record to cook this dish twice in a roll within two weeks.

If you love rice and coconut, this will be a great treat. Mmm, Mmm, Mmmm…. steam sweet white rice with coconut milk and top with shredded coconut (see coconut crepes recipe). One of my childhood favorite desserts.

With the leftover meat from the chicken dumplings, and the leftover wonton wrapper from the samosas, we made the fried chicken wonton. They were gone in no time. The kids sure love them!
